  • sugar - 2 c
  • cinnamon
  • vanilla - 2 tsp
  • salt - 1 tsp
  • eggs, beaten - 3 item
  • baking soda - 1 tsp
  • cooking oil - 1 c
  • sifted flour plain - 3 c
  • grated carrots fine - 1 c
  • pineapple small can crushed, undrained will need juice - 1 c

How to make carrot pineapple bread:

Mix together the flour, soda, salt and sugar. Stir in oil, eggs, carrots and pineapple. Mix thoroughly. Add vanilla. Bake in a 325° oven for 40 minutes. Makes 6 small pans, or 2 regular pans, bake 1 hour.
