Carrot cookies
Ingredients/Components
- vanilla - 1 tsp
- granulated sugar - 3/4 c
- salt - 1/2 tsp
- flour - 2 c
- butter - 1 c
- confectioners sugar - 1 item
- baking powder - 2 tsp
- egg - 1 item
- orange juice
- grated orange rind - 1 Tbsp
- mashed cooked carrots, cooled - 1 c
How to make carrot cookies:
Frosting:1/4 c. orange juice1 Tbsp. grated orange rind confectioners sugar Preheat oven to 350°. Cream butter and sugar until light and fluffy. Beat in egg. Beat in carrots and vanilla. Sift together flour, baking powder and salt; stir into batter. Drop by teaspoonful, 2 inches apart, onto a greased baking sheet. Bake 20 minutes. Cool on rack.Mix frosting. Add enough sugar to make spreading consistency. Spread over cooled cookies. (Good without frosting, too.)
