Ingredients/Components

• sugar - 3/4 c
• vanilla - 1 tsp
• salt - 1/4 tsp
• flour - 2 c
• baking powder - 2 tsp
• egg - 1 item
• shortening - 1 c
• powdered sugar - 1 item
• margarine - 1 tsp
• mashed carrots - 1 c
• Icing: juice and grated rind of 1 orange

How to make carrot cookies:

Icing: juice and grated rind of 1 orange1 tsp. margarine powdered sugar Mix ingredients. Bake at 350° for 10 to 15 minutes. Cool cookies. Icing goes on thin.
