  • cream cheese - 8 oz
  • vanilla - 2 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • soda - 2 tsp
  • baking powder - 2 tsp
  • vegetable oil
  • sifted flour - 2 c
  • box confectioners sugar - 1 item
  • eggs, well beaten - 4 item
  • grated carrots 1 lb - 3 c
  • Blend in beaten eggs

How to make carrot cake:

Beat oil with sugar. Blend in beaten eggs. Sift dry ingredients. Add to first mixture. Add nuts and carrots, small amount at a time. Blend well. Bake in three greased pans or 10-inch tube pan or sheet pan at 350° for 40 minutes to 1 hour, depend
