  • sugar - 2 c
  • vanilla - 2 tsp
  • flour
  • cinnamon - 2 tsp
  • nutmeg - 1/4 tsp
  • allspice - 1/4 tsp
  • soda - 2 tsp
  • salt - 1 tsp
  • shredded carrots - 2 c
  • shredded coconut - 2 c
  • chopped pecans - 1 c
  • plumped raisins - 1 c
  • crushed pineapple undrained - 8 oz
  • Mix together flour, cinnamon, nutmeg, allspice, soda and salt and add to first mix and beat well
  • almond - 1/4 tsp
  • powdered sugar - 3 4

How to make carrot cake:

Beat oil, eggs, sugar and vanilla; hold. Mix together flour, cinnamon, nutmeg, allspice, soda and salt and add to first mix and beat well. Add carrots, coconut, pineapple, pecans and raisins. Bake in 3 layer pans (greased and floured) at 350° for 50 minutes. Cool completely and frost.Cream Cheese Frosting:12 oz. cream cheese, softened1 tsp. vanilla1/4 tsp. almond3 to 4 c. powdered sugar Mix well and spread between layers and on top.
