Ingredients/Components
- oil
- eggs - 3 item
- sugar - 2 c
- vanilla - 2 tsp
- flour
- cinnamon - 2 tsp
- nutmeg - 1/4 tsp
- allspice - 1/4 tsp
- soda - 2 tsp
- salt - 1 tsp
- shredded carrots - 2 c
- shredded coconut - 2 c
- chopped pecans - 1 c
- plumped raisins - 1 c
- crushed pineapple undrained - 8 oz
- Mix together flour, cinnamon, nutmeg, allspice, soda and salt and add to first mix and beat well
- almond - 1/4 tsp
- powdered sugar - 3 4
How to make carrot cake:
Beat oil, eggs, sugar and vanilla; hold. Mix together flour, cinnamon, nutmeg, allspice, soda and salt and add to first mix and beat well. Add carrots, coconut, pineapple, pecans and raisins. Bake in 3 layer pans (greased and floured) at 350° for 50 minutes. Cool completely and frost.Cream Cheese Frosting:12 oz. cream cheese, softened1 tsp. vanilla1/4 tsp. almond3 to 4 c. powdered sugar Mix well and spread between layers and on top.Recipe categories: Desserts, Cakes, Carrots.
