  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • pkg - 1 oz
  • salt - 1 tsp
  • flour - 2 c
  • oil
  • soda
  • grated carrots - 2 c
  • baking powder - 2 tsp
  • box powdered sugar - 1 item
  • small can crushed pineapple - 1 item
  • Mix oil, sugar and eggs

How to make carrot cake:

Sift dry ingredients (with exception of sugar). Mix oil, sugar and eggs. Beat after each addition. Add dry ingredients to this mixture. Mix well. Add carrots, nuts and pineapple. Bake at 350° for 35 to 40 minutes. Makes 3 (9-inch) layers.Frosting:1 stick margarine1 (8 oz.) pkg. cream cheese1 box powdered sugar1 tsp. vanilla Cream together margarine and cream cheese. Add sugar and vanilla. Beat until creamy.
