Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 1 tsp
- salt - 1 tsp
- baking powder - 2 tsp
- baking soda - 1 tsp
- sifted flour - 2 c
- finely chopped pecans - 1 c
- margarine - 1/2 c
- salad oil
- grated raw carrots - 3 c
- confectioners sugar sift if lumpy - 1 lb
- Sift together remaining dry ingredients
How to make carrot cake:
Combine oil and sugar; mix well. Sift together remaining dry ingredients. Sift half of dry ingredients into sugar and oil mixture and blend. Sift in remaining dry ingredients, alternating with eggs one at a time, mixing well after each addition. Add carrots; mix well. Then mix in pecans. Pour into tube pan or oblong pan. Bake in slow oven at 355° about 1 hour.A Grate Idea: If you love carrot cake but dread grating the carrots, substitute one jar baby food carrots for each cup called for in your recipe.Carrot Cake Frosting:8 oz. cream cheese, room temperature1/2 c. margarine1 tsp. vanilla1 lb. confectioners sugar (sift if lumpy) Beat all ingredients until well blended and velvety. Spread on carrot cake.
