  • sifted flour - 2 c
  • baking soda - 1 tsp
  • salt - 1/4 tsp
  • baking powder - 1 tsp
  • cinnamon - 1 tsp
  • finely grated carrots - 2 c
  • salad oil - 1/2 c
  • eggs - 4 item
  • sugar - 2 c
  • margarine
  • block cream cheese - 1 (8
  • vanilla - 1 tsp
  • powdered sugar - 1 pkg
  • pecans, chopped - 1 c

How to make carrot cake:

Icing:1/2 c. margarine1 (8 oz.) block cream cheese1 tsp. vanilla1 pkg. powdered sugar1 c. pecans, chopped Mix well the salad oil, eggs and sugar. Add eggs, one at a time, beating well after each addition. Gradually add dry ingredients, mixing well. Add 2 cups carrots and mix well. Pour into two 9-inch cake pans which have been greased and floured. Bake at 350° for 50 to 60 minutes.

Icing: Beat margarine and cream cheese, gradually adding powdered sugar. Add vanilla and pecans. After cake has cooled, frost with icing.
