Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • cream cheese - 8 oz
  • eggs - 4 item
  • vanilla - 1 tsp
  • salt - 1/4 tsp
  • chopped nuts - 1 c
  • oil
  • grated carrots - 2 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • powdered sugar - 1 lb
  • sifted flour - 2 c
  • margarine

How to make carrot cake:

Icing:1/2 c. margarine1 lb. powdered sugar8 oz. cream cheese1 tsp. vanilla Combine oil and sugar; beat until creamy. Add eggs, one at a time, beating after each addition. Gradually add dry ingredients, mixing well. Add carrots and nuts. Pour into floured 9 x 13-inch pan and bake 45 to 50 minutes at 350°.

Frosting: Beat margarine and cream cheese until light and fluffy. Add powdered sugar and vanilla. Mix well and spread on top of cake when cake is cool.
