Ingredients/Components
- flour - 2 c
- sugar - 2 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- salt - 1 tsp
- ground cinnamon - 1 tsp
- finely shredded carrots - 3 c
- cooking oil - 1 c
- eggs - 4 item
- cream cheese
- butter - 1/2 c
- vanilla - 2 tsp
- confectioners sugar
How to make carrot cake:
Cream Cheese Frosting:6 oz. cream cheese1/2 c. butter2 tsp. vanilla3 1/2 c. confectioners sugar Grease and lightly flour two 9 x 1 1/2-inch round baking pans or one 13 x 9 x 2-inch pan. Combine the first 6 ingredients. Add next 3 ingredients, beating until combined. Beat on medium speed for 2 minutes.Turn into pan(s). Bake in a 325° oven for 50 to 60 minutes in 13 x 9 x 2-inch pan for 40 minutes for two 9-inch layers or until done. Cool on wire rack. Remove from pan after cooling for 10 minutes. Cool well. Frost with cream cheese icing.
For icing, blend cream cheese, butter and vanilla until light and fluffy. Gradually add sugar.
