Ingredients/Components

  • pkg - 2 oz
  • eggs, beaten - 2 item
  • mayonnaise - 1 c
  • onion, grated - 2 Tbsp
  • can condensed cream of mushroom soup - 1 3/4
  • sharp cheese, grated - 1 c
  • cheese cracker crumbs - 1 item

How to make broccoli casserole:

Cook broccoli for 5 minutes. Drain. Steam in colander 10 minutes. Combine soup, mayonnaise, onion, cheese and eggs. Add broccoli. Put in greased 1 1/2-quart casserole. Top with crumbs. Bake at 400° for 30 minutes. Makes 6 to 8 servings. Better if made a day ahead but baked just before serving. Do not add crumbs until ready to bake.

Carolyn Smoak also makes this casserole but adds 3/4 cup Miracle Whip in lieu of 1 cup mayonnaise and tops it with 1/4 cup saltine cracker crumbs.

Lucile Shelley also makes this casserole and tops it with Ritz cracker crumbs.
