Broccoli casserole
Ingredients/Components
- pkg - 2 oz
- eggs, beaten - 2 item
- mayonnaise - 1 c
- onion, grated - 2 Tbsp
- can condensed cream of mushroom soup - 1 3/4
- sharp cheese, grated - 1 c
- cheese cracker crumbs - 1 item
How to make broccoli casserole:
Cook broccoli for 5 minutes. Drain. Steam in colander 10 minutes. Combine soup, mayonnaise, onion, cheese and eggs. Add broccoli. Put in greased 1 1/2-quart casserole. Top with crumbs. Bake at 400° for 30 minutes. Makes 6 to 8 servings. Better if made a day ahead but baked just before serving. Do not add crumbs until ready to bake.Carolyn Smoak also makes this casserole but adds 3/4 cup Miracle Whip in lieu of 1 cup mayonnaise and tops it with 1/4 cup saltine cracker crumbs.
