Ingredients/Components

  • sugar
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1/4 tsp
  • chopped nuts - 1/2 c
  • flour - 2 c
  • coconut - 1 c
  • grated carrots - 2 c
  • baking soda - 2 tsp
  • vegetable oil - 1 c
  • apple, peeled, cored and grated - 1 item

How to make breakfast muffins:

Mix together flour, sugar, baking soda, cinnamon, salt and coconut. Add eggs, oil and vanilla. Stir in rest of ingredients. Bake at 350° for 20 minutes in greased or paper lined muffin pans.
