  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • pkg
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • coconut - 1 c
  • grated carrots - 2 c
  • confectioners sugar - 3 c
  • baking soda - 1 tsp
  • vegetable oil
  • margarine - 6 Tbsp
  • crushed pineapple - 1 c

How to make carrot cake:

Icing:2 (3 oz.) pkg. cream cheese3 c. confectioners sugar6 Tbsp. margarine1 tsp. vanilla Combine dry ingredients. Add eggs, oil, carrots and vanilla; beat well. Stir in pineapple, coconut and 1/2 cup nuts. Pour into a greased 9 x 13-inch pan and bake at 350° for 50 to 60 minutes.

Combine cream cheese, confectioners sugar, margarine, vanilla and nuts. Frost cooled cake. Store in the refrigerator.
