Blueberry lattice bars



  • sugar - 1/2 c
  • vanilla - 1/2 tsp
  • salt - 1/4 tsp
  • flour
  • cornstarch - 3 Tbsp
  • egg - 1 item
  • fresh or frozen blueberries
  • butter, softened no substitutes - 1 c

How to make blueberry lattice bars:

Filling:3 c. fresh or frozen blueberries1 c. sugar3 Tbsp. cornstarch In bowl, cream butter and sugar. Add egg, flour, vanilla and salt. Mix well. Cover and chill for 2 hours.

In saucepan, bring the berries, sugar and cornstarch to a boil. Cook and stir for 2 minutes until thickens.

Roll 2/3 of dough into a 14 x 10 rectangle. Place in a 13 x 9 pan or baking dish. Top with filling. Roll out remaining dough to 1/4-inch thickness. Cut into 1/2-inch wide strips. Make a lattice crust over filling. Bake at 375° for 30 to 35 minutes or until golden brown. Cool and glaze as desired.
