  • eggs - 2 item
  • salt - 1 tsp
  • flour - 1/2 c
  • soda - 1/2 tsp
  • buttermilk - 1 c
  • cooking oil - 1/4 c
  • chopped onion - 1 c
  • ground beef - 1 lb
  • grated Cheddar cheese - 1 c
  • corn meal - 1 c
  • cream-style corn - 3/4 c
  • canned black-eyed peas, drained - 1 c
  • jalapeno peppers, chopped - 2 item

How to make black-eyed pea cornbread:

Brown meat; drain and break into small pieces. Mix all ingredients, adding cheese last. Cook in well-greased 13 x 9-inch pan at 350° for 45 minutes or until done. This makes a large batch. Serve with a salad and ice tea.
