Black-eyed pea cakes
Ingredients/Components
- fine bread crumbs - 1/2 c
- black pepper - 1 tsp
- garlic cloves, minced - 4 item
- Tabasco - 1 tsp
- minced red onion - 1/2 c
- minced red bell pepper - 1/4 c
- fresh jalapenos, minced - 2 item
- unsalted butter low-fat margarine may be used - 2 Tbsp
- cooked black-eyed peas if canned peas are used, rinse and drain; black beans may be used - 2 c
- egg yolks egg substitute may be used - 2 item
- chopped fresh coriander - 1 Tbsp
How to make black-eyed pea cakes:
Cook first 5 ingredients over low heat for 5 minutes. Add to remaining ingredients. Chill for 1 hour, covered. Shape into 1/2-inch patties. Coat with yellow cornmeal and cook approximately 2 minutes on each side in olive oil (approximately 1/2 cup).Recipe categories: Snacks, Side dish, Beans.
