Black bean soup
Ingredients/Components
- vegetable oil - 2 Tbsp
- lime juice - 2 Tbsp
- cloves garlic, minced - 4 item
- chicken broth
- ground cumin - 1 Tbsp
- crushed red pepper flakes - 1/2 1
- thick and chunky salsa - 3 c
- nonfat plain yogurt - 1/2 c
- cans black beans undrained - 3 oz
- crackers any variety - 50 item
How to make black bean soup:
In 4-quart saucepot over medium heat, cook onion, garlic, cumin and pepper flakes in oil until onion is tender (about 3 minutes). Remove from heat.In electric blender, puree 2 cans of beans and liquid in batches with chicken broth. Add to pot. Stir in remaining beans, salsa and lime juice. Heat mixture until boiling; reduce heat to low. Simmer for 30 minutes. Ladle 1 cup soup into bowl. Top with dollop of yogurt. Serve hot with crackers. Makes 10 (1 cup) servings.
