Beef provencale
Ingredients/Components
- salt
- butter - 2 Tbsp
- water - 1/4 c
- potatoes - 10 item
- finely chopped parsley - 3 Tbsp
- dash of ground pepper - 1 item
- to 2 cloves minced garlic - 1 item
- beef tenderloin
How to make beef provencale:
In a skillet, heat butter until lightly brown. Add meat; brown well on all sides. Sprinkle with half the salt and pepper. Reduce heat; cover and let meat cook about 10 minutes. Turn once during cooking. Remove meat; cover with foil. Add water to pan. Heat and scrape drippings; strain juices. Peel potatoes; slice thinly. Layer into a greased baking dish. Sprinkle with remaining salt and pepper. Pour pan juices over.Bake potatoes at 425° for about 30 minutes. Remove from oven. Cut beef into 8 slices. Place over potatoes. Stir butter, garlic and parsley together; spread over meat. Bake at 425° for 8 minutes longer. Serve.
