- salt and pepper to taste - 1 item
- rice - 1 c
- large can whole tomatoes - 1 item
- small can pimentos - 1 item
- large broiler-fryer, cut up - 1 item
- frozen green peas, defrosted - 1 pkg
- a little oil - 1 item
How to make arroz con pollo:
Preheat oven to 350°. Brown chicken in the oil and transfer to an oven casserole. Add tomatoes and their liquid. Add rice. Lower temperature to 325°. Cover and cook for 1 hour. Fluff rice; add the defrosted peas and arrange pimentos on top. Cook, covered, an additional 10 minutes. Serve.Recipe categories: < 4 hours, North american, Mexican.
