Barley casserole
Ingredients/Components
- butter - 4 Tbsp
- chicken broth - 2 c
- clove garlic - 1 item
- sliced mushrooms - 1/2 lb
- large onion - 1 item
- barley long cooking - 1 c
- toasted almonds for sprinkling on top - 1 item
How to make barley casserole:
Saute onion and mushrooms in butter. Add barley and brown. Add crushed garlic clove. Pour into greased casserole. Pour over this 1 cup of chicken broth. Cover. Bake at 350° for 30 minutes. Uncover. Add second cup of chicken broth. Stir. Sprinkle with almonds. Bake until liquid is absorbed (approximately 1/2 hour).Recipe categories: Side dish, Casseroles, Beans.
