Banana coffee cake

Ingredients/Components

• sugar - 1 c
• eggs - 2 item
• all-purpose flour, sifted
• salt - 1/2 tsp
• soda - 3/4 tsp
• shortening - 1/2 c
• mashed bananas - 3/4 c

How to make banana coffee cake:

Cream shortening and sugar until fluffy. Add eggs 1 at a time, beating well after each. Stir in bananas.

Sift together dry ingredients and add to banana mixture. Stir well and pour into a greased or Pam sprayed pan (9 x 9 x 2-inch). Bake in a preheated 350° oven for 35 minutes or until done, about 50 minutes in a loaf pan.
