Ingredients/Components

  • sugar
  • eggs - 2 item
  • vanilla - 1 tsp
  • milk - 4 Tbsp
  • chopped nuts - 1 c
  • flour - 2 c
  • brown sugar - 5 Tbsp
  • soda - 1 tsp
  • shortening - 3/4 c
  • margarine, melted - 7 Tbsp
  • ripe bananas, mashed - 3 item
  • coconut or 1 c - 1 c

How to make banana coffee cake:

Cream well the sugar and shortening. Add eggs and bananas. Add, sifted together, the flour and soda. Add milk and vanilla. Pour into greased and floured 13 x 9 x 2-inch pan and spread with topping of melted margarine, brown sugar, coconut or raisins and chopped nuts. Bake at 350° for 30 to 40 minutes.
