  • sugar - 1 c
  • eggs - 4 item
  • chopped nuts - 1/2 c
  • flour - 2 c
  • brown sugar
  • baking powder - 2 tsp
  • medium bananas - 3 item
  • grated lemon peel - 1/2 tsp
  • softened margarine - 2 3
  • 1 stick soft margarine - 1/2 c

How to make banana coffee cake:

Topping:1/4 c. brown sugar1/2 c. chopped nuts2 to 3 Tbsp. softened margarine Sift together flour, baking powder and lemon peel; set aside. Blend together margarine and sugar. Add eggs, 1 at a time, then bananas. Mix in flour mixture. Pour batter into greased and floured 9 x 13-inch pan.

Mix up topping and sprinkle over batter. Bake at 350° for 1 hour.
