Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1 tsp
- chopped nuts - 1 c
- flour - 3/4 c
- nutmeg - 1/4 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar - 1 c
- ginger - 1/2 tsp
- Cool Whip - 1 c
- lemon juice - 1 tsp
- softened margarine - 3 Tbsp
- Gradually add sugar
How to make pumpkin roll:
Beat eggs 5 minutes. Gradually add sugar. Stir in pumpkin and lemon juice. Fold in dry ingredients that have been sifted together. Line a jelly roll pan with wax paper. Spray Pam on wax paper. Fill pan with mixture and spread evenly. Top with chopped nuts. Bake at 375° for 15 to 18 minutes. Turn out onto clean tea towel that has been sprinkled with powdered sugar. Peel off wax paper. Roll up towel immediately and cool. Unroll and spread with filling.Filling:3 oz. cream cheese3 Tbsp. softened margarine1 c. powdered sugar1 c. Cool Whip1 tsp. vanilla Beat filling ingredients until smooth. After filling is spread, roll back up (without towel) in foil. Chill well before serving.
