  • butter or margarine - 2 Tbsp
  • diced onion - 1/2 c
  • salt and pepper to taste - 1 item
  • diced celery - 1/4 c
  • herbed bread crumbs - 1 c
  • to 6 flounder fillets - 4 item
  • to 6 strips bacon, cut in half - 4 item

How to make baked flounder:

Mix bread crumbs, onion and celery. Salt and pepper to taste. Saute in butter until onion and celery are softened. Place dark skinned fillets in foil-lined pan, divide dressing evenly and top with light skinned fillets. Place 3 half strips of bacon on top of each. Place in oven preheated to 450° for 45 minutes.
