Baked flounder
Ingredients/Components
- chopped onion - 2 Tbsp
- salt - 1/2 tsp
- ground pepper - 1/8 tsp
- apple juice - 1/3 c
- lemon juice - 2 Tbsp
- butter or margarine - 2 Tbsp
- all-purpose flour - 2 Tbsp
- whipping cream - 1/4 c
- freshly grated Parmesan cheese - 1/4 c
- minced fresh parsley - 1 item
How to make baked flounder:
Arrange fillets in a lightly greased 12 x 8 x 2-inch baking dish. Sprinkle with onion, salt and pepper. Combine apple juice and lemon juice; pour over fish. Cover and bake at 350° for 25 to 30 minutes or until fish flakes easily when tested with fork. Transfer fish to serving platter. Strain and reserve 2/3 cup liquid. Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Add whipped cream and save 2/3 cup liquid. Cook over medium heat, stirring until thick. Pour over fish. Sprinkle with cheese and parsley.Recipe categories: Main dish, Saltwater fish, Sole and flounder.
