Ingredients/Components
- plus 2 Tbsp - 1/4 c
- apple juice - 3/4 c
- low-fat granola - 6 Tbsp
- chopped mixed dried fruit - 6 Tbsp
- small red cooking apples - 6 item
- 1 1/2-inch cinnamon sticks - 6 item
- low-fat vanilla flavored yogurt - 3/4 c
How to make baked apples:
Preheat oven to 350°. In small saucepan, combine apple juice and 1/4 cup sugar. Stir until sugar dissolves. Heat to boiling over high heat. Boil 6 minutes to reduce liquid.Core apples; with vegetable peeler, peel top half of each apple.
In bowl, mix remaining sugar and the dried fruit. Spoon into cored center of apples. Place a cinnamon stick in each to look like a stem. Place in baking dish. Pour apple juice mixture over apples. Cover with foil. Bake 45 minutes or until apples are tender. Cool. Top each with 2 tablespoons yogurt and 1 tablespoon granola. Makes 6 servings. Contains 214 calories per serving.
