Autumn apple cake



Ingredients/Components
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- chopped pecans - 1 c
- salt - 1 tsp
- nutmeg - 1/2 tsp
- baking soda - 2 tsp
- vegetable oil
- all-purpose flour - 3 c
- firmly packed brown sugar - 1 c
- raisins or currants - 1 c
- thickly sliced, pared apples - 3 c
How to make autumn apple cake:
In a small bowl, soak currants or raisins in water for 1 hour. Drain. Sift together flour, baking soda, salt, cinnamon and nutmeg. In a large bowl, with electric mixer, beat oil and sugars until well blended, about 6 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla, then gradually beat in flour mixture. Fold currants into batter along with apples and pecans. Preheat oven to 350°. Spoon batter into 9-inch greased tube pan. Bake 1 1/2 hours.
