Ingredients/Components
- grated Parmesan cheese - 1/4 c
- shredded Mozzarella - 1 c
- minced fresh basil - 1 Tbsp
- butter/margarine - 3 Tbsp
- green onion, sliced thin - 1/4 c
- unpeeled zucchini, cut in 1/8-inch slices - 3 c
- large tomato, peeled and cubed - 1 item
How to make zucchini saute:
In a 10-inch pan, melt butter/margarine over medium heat. Stir in zucchini, onion and basil. Toss to coat all vegetables evenly. Cook, stirring occasionally until zucchini is almost tender-crisp, about 8 minutes. Stir in tomato cubes; cook 1 minute. Sprinkle with cheeses. Cover and let stand for a minute or so until cheeses begin to melt. Serves 6.Recipe categories: Squash, Side dish, Vegetables.
