Ingredients/Components

  • salt - 1/2 tsp
  • margarine or butter - 1/2 c
  • eggs, well beaten - 2 item
  • oregano - 1/4 tsp
  • coarsely chopped onion - 1 c
  • chopped parsley - 1/2 tsp
  • black pepper - 1/2 tsp
  • 2 c - 8 oz
  • can refrigerated quick crescent dinner rolls - 1 oz
  • sweet basil - 1/4 tsp
  • Dijon or prepared mustard - 2 tsp
  • thinly sliced, unpeeled zucchini - 4 c

How to make zucchini quiche:

Preheat oven to 375°. In a 10-inch skillet, cook zucchini and onion in margarine or butter until tender, about 10 minutes. Stir in seasoning.

In a large bowl, blend eggs and cheese. Stir in vegetable mixture, slightly cooled.

Separate crescent rolls into 8 triangles. Place in an 11-inch quiche or pie pan. Press over bottom and up sides. Spread with mustard. Pour vegetable and cheese mixture into prepared pan.

Bake at 375° for 40 to 45 minutes, until an inserted knife comes out clean. If crust becomes too dark, cover with aluminum foil until done. Let stand 10 minutes before serving.
