Zucchini pie

Ingredients/Components

• eggs - 4 item
• salt - 1/2 tsp
• Bisquick - 1 c
• pepper - 1/4 tsp
• grated cheese - 1/2 c
• medium onion - 1 item
• olive oil - 1/2 c
• shredded Mozzarella - 1 c
• zucchini, diced - 3 c
• parsley if fresh, more - 1 Tbsp

How to make zucchini pie:

Chop onion and fry with parsley (if fresh) in 1/2 cup olive oil. Let cool. In large bowl, mix zucchini, onion and parsley. Mix eggs, Bisquick, grated cheese, salt, pepper and Mozzarella. Mix well, then pour in greased pan and bake for 1 hour at 350°
