Ingredients/Components
- vanilla - 1 tsp
- flaked coconut - 1/2 c
- all-purpose flour - 1/3 c
- pumpkin pie spice - 1 tsp
- eggs, well beaten - 3 item
- cooked zucchini - 2 c
- unbaked pie shell 9-inch - 1 item
- brown or white sugar
How to make zucchini pie:
Cook zucchini in boiling water until tender. Drain. Place zucchini in blender for 1 minute. In large bowl, mix all other ingredients; mix well. Now add zucchini to that mix and pour in pan. Sprinkle with coconut. Bake at 350° for 25 to 30 minutes or until coconut is brown.Recipe categories: Eggs/dairy, Italian, European.
