Ingredients/Components
- sugar - 5 c
- vinegar - 3 c
- coarse salt - 1/2 c
- celery seed - 1/2 tsp
- onions, sliced - 6 item
- mustard seed - 2 Tbsp
- green peppers - 2 item
- turmeric
- zucchini 1/4-inch slices - 4 qt
How to make zucchini pickles:
Put zucchini, onions and peppers in a large container and sprinkle with 1/2 cup coarse salt. Cover with 4 trays of ice cubes and let stand 3 to 4 hours.To make syrup: Bring sugar, vinegar and spices to a boil. Then add drained zucchini. Bring to boil and boil 5 minutes. Put in sterilized jars and seal. Makes 8 pints.
