Zucchini pickles
Ingredients/Components
- sugar
- salt - 1/3 c
- ice cubes - 2 qt
- celery seed
- white vinegar - 3 c
- mustard seed - 2 Tbsp
- turmeric
- 1/2 large garlic cloves - 1 item
- thinly sliced zucchini pickles - 4 qt
How to make zucchini pickles:
Wash zucchini thoroughly using a vegetable brush and drain. Trim ends and slice 1/8 and 1/4-inch slices. Add onion, garlic and salt. Mix thoroughly. Cover with ice and let stand for 3 hours. Drain thoroughly and remove garlic cloves.Combine sugar, spices and vinegar; heat just to boiling. Add drained zucchini and onion slices and heat 5 minutes. Makes 7 pints.
