  • shredded Cheddar cheese - 8 oz
  • salt and pepper to taste - 1 item
  • small onion, chopped - 1 item
  • shredded zucchini - 4 c
  • Jiffy corn muffin mix - 1 pkg

How to make zucchini casserole:

Mix 1/2 of cheese with the rest of the ingredients and pour into an 8-inch greased casserole. Top with the rest of the cheese and bake 1 hour at 350°.
