  • salt - 1 tsp
  • eggs, beaten - 4 item
  • vegetable oil
  • margarine - 1 Tbsp
  • pepper - 1/4 tsp
  • soy sauce - 1 Tbsp
  • grated Cheddar cheese - 4 oz
  • onion, finely chopped - 1 c
  • cooked rice - 2 c
  • zucchini, grated - 4 c

How to make zucchini casserole:

Saute onion and zucchini in margarine until soft. Place in 4-quart casserole. Add remaining ingredients and mix well. Bake uncovered at 350° for 45 minutes.
