Ingredients/Components
- eggs - 2 item
- boiling water - 2 c
- margarine - 1 Tbsp
- Parmesan cheese - 1 c
- chopped green pepper - 1/4 item
- sliced zucchini - 4 c
- bread crumbs - 2 Tbsp
- mayonnaise - 1 c
- salt and pepper - 1 item
- onion, chopped - 1 item
How to make zucchini casserole:
Cook zucchini in water until tender; drain. In large bowl, beat eggs. Stir in mayonnaise, onion, green pepper, cheese, salt and pepper. Add zucchini. Pour in a greased 1 1/2-quart baking dish. Sprinkle bread crumbs and bake at 350° for 30 minutes or until bubbly. Makes 6 servings.Recipe categories: Egg, Side dish, Casseroles.
