Zucchini casserole
Ingredients/Components
- eggs - 2 item
- boiling water - 2 c
- margarine - 1 Tbsp
- grated Parmesan cheese - 1 c
- sliced zucchini - 4 c
- salt and pepper to taste - 1 item
- mayonnaise - 1 c
- onion, chopped - 1 item
- green pepper, chopped - 1/4 c
- buttered bread crumbs - 2 Tbsp
How to make zucchini casserole:
Cook zucchini in water until tender; drain. In large bowl, beat eggs. Stir in mayonnaise, onion, green pepper, salt, pepper and cheese. Add zucchini. Turn into greased 1 1/2 quart dish. Dot with butter and sprinkle with bread crumbs. Cook at 350° for 30 minutes. Serves 6.Recipe categories: Egg, Side dish, Casseroles.
