  • sugar
  • salt
  • chopped nuts - 1 c
  • eggs, beaten - 4 item
  • baking powder - 1/2 tsp
  • baking soda
  • vegetable oil
  • all-purpose flour - 3 c
  • ground cinnamon - 1 Tbsp
  • plus 1 tsp - 1 Tbsp
  • coarsely shredded zucchini - 4 c

How to make zucchini bread:

Heat oven to 350°. Grease generously bottoms only of 2 loaf pans, 9 x 5 x 3-inch. Blend all ingredients on low speed 1 minute, scraping bowl constantly. Beat on medium speed 1 minute. Pour into pans. Bake until wooden pick inserted in center comes out clean 50 minutes to 1 hour. Cool 10 minutes; remove from pans. Cool completely.
