Ingredients/Components
- butter, softened - 1/4 c
- sugar - 2 c
- cinnamon - 1 Tbsp
- eggs - 3 item
- vanilla - 1 Tbsp
- salt - 1 tsp
- baking powder - 1/4 tsp
- baking soda - 2 tsp
- vegetable oil - 1 c
- nuts - 1 c
- box confectioners sugar - 1 item
- flour, sifted - 2 c
- loosely packed, coarsely grated zucchini - 2 c
- Stir in zucchini, flour, cinnamon, baking soda, salt and baking powder
How to make zucchini bread:
In a large bowl beat eggs until they are frothy; beat in sugar, vegetable oil and vanilla until thick and lemon colored. Stir in zucchini, flour, cinnamon, baking soda, salt and baking powder. Fold in nuts. Pour mixture into 2 oiled and floured loaf pans. Bake at 350° for 1 hour until toothpick comes out clean.Cream Cheese Frosting:8 oz. cream cheese, softened1 box confectioners sugar1/4 c. butter, softened1 tsp. vanilla In bowl mix ingredients together and spread on cooled Zucchini Bread!Recipe categories: Breads, Quick breads, Sweet.
