Zucchini bread

Ingredients/Components

• sugar - 2 c
• cinnamon - 2 tsp
• eggs - 3 item
• vanilla - 3 tsp
• salt - 1 tsp
• oil - 1 c
• soda - 1 tsp
• baking powder - 1/4 tsp
• nuts - 1/2 c
• sifted flour - 3 c
• grated zucchini - 2 c

How to make zucchini bread:

Beat sugar and oil together. Add eggs and vanilla. Beat well. Mix all dry ingredients together. Now grate zucchini (do not grate zucchini ahead of time); if small zucchini is used, do not peel. If large ones are used, use only the firm inside, no seeds or skin. Add all ingredients together. Pour into 2 or 3 greased and floured loaf pans. Bake 1 hour at 350°.
