- sugar - 2 c
- cinnamon
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1 tsp
- flour - 3 c
- oil - 1 c
- baking powder - 1/2 tsp
- baking soda - 1 tsp
- grated zucchini - 2 c
- raisins - 1 c
- nuts optional - 1 item
- cherries optional - 1 item
- pineapples optional - 1 item
How to make zucchini bread:
Steam raisins and let set 1 hour; drain. Beat sugar, eggs and oil until fluffy. Add flour, vanilla, baking soda, baking powder, salt and cinnamon. Stir in zucchini and raisins. Fill half 2 or 3 loaf pans. Bake at 325° for 3/4 to 1 hour.Recipe categories: Breads, Quick breads, Sweet.
