Wild rice soup
Ingredients/Components
- half and half - 1 c
- salt - 1/2 tsp
- flour - 1/2 c
- butter - 6 Tbsp
- shredded carrots - 1/3 c
- chicken broth - 3 c
- minced onion - 1 Tbsp
- slivered almonds - 3 Tbsp
- cooked wild rice - 2 c
- dry sherry optional - 2 Tbsp
- minced ham - 1/3 c
- parsley or chives - 1 item
How to make wild rice soup:
Melt butter; saute onion until tender. Blend in flour; gradually stir in broth. Cook, stirring constantly, until comes to boil; boil and stir 1 minute. Stir in rice, salt, ham, carrots and almonds. Simmer 5 minutes. Blend in half and half and sherry. Heat to serving temperature. Yield: 5 1/2 cups.Recipe categories: Lunch/snacks, Soups & stews, Rice.
