Ingredients/Components

  • dry yeast - 1 pkg
  • lukewarm water - 1/2 c
  • milk - 1 c
  • boiling water - 1 c
  • shortening - 2 Tbsp
  • molasses, honey or sugar - 2 Tbsp
  • salt - 2 tsp
  • all-purpose flour - 3 c
  • whole wheat flour - 3 c
  • shortening for greasing bowl - 1 item
  • gluten flour if you are using variety flours without much gluten, this helps in the rising and lightness - 1/8 c

How to make whole wheat bread:

Sprinkle yeats over lukewarm water (let stand for 10 minutes). In a separate bowl large enough to mix your bread dough, mix milk, boiling water, shortening, molasses, and salt. Let it cool to lukewarm and add yeast. Gradually mix in the all-purpose flour, cup at a time, then beat in the whole wheat flour. If dough becomes too thick to beat, knead it by hand.

After dough is smooth and resilient (not sticky) put it in a greased bowl (large enough for it to double in size), turn it over so that all portions are greased. Cover bowl with damp cloth, set in warm place and let dough rise to double size. Punch down and let rise second time. Cut in half, mold and put in a greased bread pan.
