Watermelon pickles
Ingredients/Components
- prepared watermelon rind - 6 qt
- salt - 1 item
- Pickling Syrup - 1 item
- lemon, sliced thin - 1 item
- whole allspice - 3 Tbsp
- piece ginger root - 1 item
- 4-inch sticks cinnamon - 3 item
- cider vinegar
- water - 3 c
- sugar - 6 lb
- whole cloves - 3 Tbsp
How to make watermelon pickles:
Pickling Syrup:3 qt. cider vinegar3 c. water6 lb. sugar3 Tbsp. whole cloves Trim off green skin and pink meat from watermelon rind. Cut rind into 1-inch squares or small oblong pieces. Cover with cold water. Add salt, using 1/4 cup salt to 2 quarts of water and soak overnight. Drain. Cover with fresh cold water and boil until tender. Drain watermelon. Add to Pickling Syrup. Add lemon and simmer gently until clear. Remove spice bag. Pack pickles in clean, hot, sterilized jars and seal. Makes about 5 pints.Pickling Syrup: Mix vinegar, water and sugar in large preserving kettle. Add spices tied in cheesecloth bag. Boil rapidly 5 minutes.
