Ingredients/Components
- sugar - 7 c
- salt - 2 Tbsp
- vinegar - 2 c
- whole cloves - 1 Tbsp
- watermelon
- sticks cinnamon - 3 item
How to make watermelon pickles:
Choose a black diamond melon with thick skin. Trim outer green skin and pink flesh. Cut into cubes. (Remove all red meat.) Soak overnight in brine. Rinse and let stand in ice water 4 hours. Drain; cover with boiling water and simmer until tender (about 10 minutes).Prepare syrup: Tie spices in cheesecloth bag. Add drained rind to boiling syrup and cook 2 or 3 minutes. Pour into large glass or crockery bowl and let stand overnight at room temperature, covered with wax paper. In the morning, drain syrup; heat to boiling and pour back over rind. Let stand overnight. On third morning, heat rind in syrup. Put in hot sterilized jars and seal. Makes 7 or 8 pints.
