Ingredients/Components

  • cinnamon - 1 tsp
  • granulated sugar - 1/4 c
  • milk - 3/4 c
  • chopped dates - 1/2 c
  • baking powder
  • vegetable oil - 1/4 c
  • large egg - 1 item
  • all-purpose flour - 1 c
  • chopped walnuts or pecans - 1/2 c
  • bran cereal I like Fiber One - 1 c

How to make walnut date muffins:

Mix cereal and milk in a medium sized bowl. Let stand 3 to 5 minutes, until milk is absorbed. Preheat oven to 400°. Grease muffin cups or use paper liners. Beat egg and oil with cereal. Stir in dates, nuts and orange peel. Mix dry ingredients in large bowl. Pour in liquid ingredients. Fold in with rubber spatula, just until dry ingredients are moistened. Scoop batter into muffin cups. Bake at 400° for 15 to 25 minutes or until spongy to touch in center.

Turn out onto rack to cool thoroughly. Wrap in plastic bag or put in airtight container and let stand several hours for flavor to develop. Reheat before serving. Yield: 12 muffins.
