Vegetarian lentil soup
Ingredients/Components
- salt
- water
- oil - 1/4 c
- pepper - 1/4 tsp
- can tomatoes, cut up - 1 oz
- minced parsley - 3 Tbsp
- large onion, chopped - 1 item
- barley - 1 c
- large potato, diced - 1 item
- large carrot, diced - 1 item
- lentils, rinsed - 1 c
How to make vegetarian lentil soup:
Place all ingredients in a large pot. Bring to a boil. Reduce heat, cover and simmer 1 hour or until lentils and barley are tender, stirring occasionally. Add more water, if too thick. Makes about 4 quarts. Can be frozen.Recipe categories: Soups & stews, Beans, Lentil.
