Ingredients/Components

  • salt
  • water
  • oil - 1/4 c
  • pepper - 1/4 tsp
  • can tomatoes, cut up - 1 oz
  • minced parsley - 3 Tbsp
  • large onion, chopped - 1 item
  • barley - 1 c
  • large potato, diced - 1 item
  • large carrot, diced - 1 item
  • lentils, rinsed - 1 c

How to make vegetarian lentil soup:

Place all ingredients in a large pot. Bring to a boil. Reduce heat, cover and simmer 1 hour or until lentils and barley are tender, stirring occasionally. Add more water, if too thick. Makes about 4 quarts. Can be frozen.
