Ingredients/Components
- water - 3 4
- chopped celery - 1 c
- chopped carrots
- medium onion, chopped - 1 item
- fresh basil optional - 1/2 tsp
- clove of garlic optional - 1 item
- chopped turnips or 1 leek, chopped use white part - 1 c
- medium pearl barley * - 1/2 c
How to make vegetable soup:
*Instant barley works, but does not taste as good. Boil less time for quick.In a large kettle, cook soup bones 2 1/2 hours. Remove bones and skim off fat from broth. Easier version, add beef base to boiling water. Add barley; cook 20 to 30 minutes. Add rest of vegetables and cook 15 to 20 minutes more; boil slowly. Can use whatever vegetables you have.
