Ingredients/Components
- salt - 1 tsp
- dry mustard
- garlic powder
- chopped celery - 1 c
- chopped onions - 2 c
- cayenne - 1/8 tsp
- dried oregano leaves - 1 tsp
- white pepper - 1/4 tsp
- black pepper - 1/4 tsp
- onion powder
- vegetable stock - 5 c
- apple juice
- sweet paprika - 1 tsp
- cauliflower florets - 1 c
- broccoli florets - 1 c
- dried sweet basil leaves - 2 tsp
- all-purpose flour, browned - 5 Tbsp
- tamari rich flavorful soy sauce - 3 Tbsp
- balsamic vinegar or favorite vinegar - 2 tsp
- freshly cut corn kernels - 1 c
- peeled carrot sticks, 1 1/2 x 1/4-inch - 1 c
- turnip sticks - 1 c
- zucchini sticks - 1 c
- yellow squash sticks - 1 c
- any kind cooked pasta - 4 c
How to make vegetable pasta:
Seasoning Mix:2 tsp. dry mustard2 tsp. dried sweet basil leaves1 1/2 tsp. onion powder1 1/2 tsp. garlic powder1 tsp. salt1 tsp. sweet paprika1 tsp. dried oregano leaves1/4 tsp. black pepper1/4 tsp. white pepper1/8 tsp. cayenne Make your own stock by boiling the trimmings from vegetables that have been prepared. If using a meat stock, chill and remove fat.Combine the seasoning mix ingredients in a small bowl. Preheat a heavy 5-quart pot, preferably nonstick, over high heat to 350°, about 4 minutes. Add the onions, celery and seasoning mix. Stir and cook 4 minutes, checking the bottom of the pot occasionally for sticking. Add apple juice, scrape the bottom of the pot to clear it of all brown bits. Cook 5 or 6 minutes until most of the liquid has evaporated. Add browned flour, tamari, and vinegar. Stir until the flour is completely absorbed, forming a thick paste. Spread this mixture evenly over bottom of the pot and cook, scraping the bottom frequently for 1 minute. Add the stock. Stir until all the ingredients are well mixed. Bring to boil. Add corn and carrots; cook 2 minutes. Add turnips and remaining vegetables. Cook until crispy-tender. Fold in pasta and cook until pasta is heated through.
